Herbal Non-caffeinated
Herbal teas (tisanes) are best brewed with water at a full boil, typically
200-212 F. This high temperature extracts flavor from robust herbs, flowers, and roots. Herbal teas can withstand and benefit from longer steeping times around 5-10 minutes.
Caffeinated
Caffeinated teas require higher temperatures to release more caffeine, but temperatures that are too hot can make the tea bitter. Here are the suggested temps for different types of tea:
Black Tea- 200 -212 F
Oolong Tea- 185- 205 F
Green Tea- 160- 180 F
White Tea- 160- 185 F
Matcha- 160-175 F
Or try cold brewing: Steeping in cold water for 4-8 hours extracts caffeine and theanine while leaving tannins.
